DORITOS® FLAMIN’ HOT® Chicken Quesadillas

Simple and satisfying, these zesty quesadillas are grilled — but you can also pan-toast them over medium heat or cook them in a panini press.

INGREDIENTS

  • 4 cups DORITOS® FLAMIN' HOT® Nacho Flavored Tortilla Chips
  • 2 cups shredded cooked chicken
  • 1 tbsp taco seasoning
  • 2 ½ cups shredded Monterey Jack cheese
  • 8 large flour tortillas (10-inch)
  • 1/4 cup pickled jalapeño pepper slices
  • 4 tsp olive oil
  • 1 cup sour cream, for serving
  • 1/2 cup Buffalo hot sauce, for serving
  • 8 lime wedges, for serving

Instructions

  • Preheat grill to medium heat; grease grates well.
  • In a medium bowl, lightly crush DORITOS® FLAMIN' HOT® Nacho Flavored Tortilla Chips with your fingertips; set aside.
  • In a small bowl, toss chicken with taco seasoning; set aside.
  • Sprinkle 1/4 cup cheese on one half of each tortilla; top cheese evenly with seasoned chicken, jalapeños and crushed tortilla chips. Sprinkle remaining cheese over top. Fold each tortilla over to enclose filling. Brush outside of tortillas with oil.
  • In batches, grill quesadillas for 4 to 6 minutes, turning once, or until grill-marked, toasted, filling is heated through and cheese is melted.
  • Slice each quesadilla into quarters. Serve with sour cream, hot sauce and lime wedges.
